SHAKESPEARE AS INSPIRATION FOR THE WINERY

Good wines are like a Shakespearean comedy. Stephano, the inebriated cellar master from Shakespeare's famous comedy “The Tempest” is therefore not just a coincidence as the godfather of Das-Wein-Gut StephanO. In addition to StephanO, many of Shakespeare's other main characters such as Trinculo, Prospero and Gonzalo complete the composition of our wines from Blaufränkisch to Merlot, which thrive excellently on the heavy, loamy soils of the southern Burgenland vineyards. THE WINECELLAR

VITICULTURE IN HARMONY WITH NATURE

Our grapes are obtained from naturally cultivated vineyards. The extensive renunciation of chemical agents, with the aim of reducing environmental pollution and maintaining ecological diversity and soil fertility in the vineyard, promotes the natural resistance of the vines. We pay attention to healthy soils with many soil organisms and a permanent, species-rich greening of the lanes in the vineyard. This increases biodiversity in the vineyards and a more diverse ecosystem is preserved.

In this way, we can process healthy grapes very carefully in the cellar: spontaneous fermentation without pure yeasts, working with gravity, long storage on the yeasts to protect against oxidation and no addition of animal substances. We let our wines mature in large wooden barrels, concrete eggs or ceramic balls - this way, the typicality of the variety and the variety of flavors can be impressively supported.

With this processing method, our wines can also be described as ketogenic and vegan.

Viticulture

STEEL TANKS, OAK BARRELS, CONCRETE EGGS, CERAMIC BALLS,...

We follow the latest trends, but also live tradition!

Normally we stored white wine mainly in stainless steel tanks and red wine in wooden barrels. Our great wines mature almost exclusively in French oak barrels, the so-called barriques (225 lt) or in 500 l barrels. Allowing wine to mature in porous wooden barrels gives the wine oxygen, but also allows it to partially take on the taste of the wood through tannins and roasted aromas. If wines are aged in stainless steel containers, only a small amount of maturation is possible because hardly any oxygen gets to the young wine (reductive aging).

Vinification (wine production) in concrete eggs, which has been widespread in France and Spain for decades, has been used for our special white wines since 2015. In the concrete egg, the oxygen reaches the wine in the optimal ratio evenly through the concrete layer, which leads to significantly better maturation (oxidative expansion) and the original taste of the wine is retained. During the fermentation phase and during storage, the wine can move smoothly in the concrete egg without edges or corners. The must ferments spontaneously (spontaneous fermentation) with its own yeasts, the wine is more mineral, more delicate and more complex. The thermal behavior of the concrete cools the wine particularly well and makes it taste fresher and fruitier.

And then we also use ceramic balls that particularly emphasize the fruitiness of red wines...

THE WINEMAKER

STEPHAN & MONIKA

A lot has been written about the fulfillment of dreams, the realization of given goals, and the meaning of life. My previous career as a business IT specialist enabled me to do a lot, but realizing my long-held dream of owning my own winery is something very special. For a long time I felt the longing to be a winemaker, attended seminars and courses, worked in the vineyards and gained experience. However, I particularly enjoyed the privilege of being able to personally learn the secrets of viticulture from experienced winemakers. Now it's time to compose StephanO's wine together with my wife Monika. As a neurosurgeon, she works and researches at the University Hospital of the Paracelsus Medical Private University in Salzburg and enjoys the dream of owning her own winery in southern Burgenland with me. Why? I do think that the daily challenges of your job require a very strong balance. Despite hard work, we find these hours of leisure among the people and in the vineyards of southern Burgenland. It is and remains exciting.

PHILOSOPHY

WE LOVE THIS WORK OF ART WINE

Wines, as they are a textbook example and from their description can only come from southern Burgenland: reserved and yet full of character. Just like the people from this very special area. The central topic, where the nearest hectic city is miles away and stress has not yet been invented: wine. From the first grape to the last bottle. Pure deceleration.
