There is probably nothing in this world that lifts the mood as reliably and elegantly as a glass of sparkling wine.
Our sparkling wines are produced dry using the "Méthode Traditionnelle" (traditional bottle fermentation as in France) and are only disgorged after a long period of storage on the yeast.

1. Young, tannic red wines with lots of character:
Young red wines, known for their high tannin content, benefit greatly from a little aeration, as it softens the tannins a bit and softens the hard edges of the wine.
The younger and more tannic the wine, the longer it has to breathe. An hour is usually enough to mellow the tannins and enjoy a young, strong red wine.
2. Aged red wines with visible sediment:
After a period of time, tannins and other solids begin to combine, solidify, and settle on the bottle as a sediment that can taste bitter. It is therefore always a good idea to separate the sediment by slowly decanting and leave it in the bottle.
Caution: The older a wine is, the more sensitive it is to movement, pouring and aeration. Aged red wines should remain in the carafe for a very short time, otherwise there is a risk that their smooth and delicious taste will be masked by oxidation.
3. Selected white wines:
Full-bodied white wines tend to share similar characteristics to red wines, such as being dry, having a heavier mouthfeel, and benefiting greatly from aeration.
